Separate layers are normal in a simple oil-and-water mixture.
From ingredient to marinade
Why has the marinade separated?
Oil and water do not naturally remain mixed. Stir or whisk shortly before distributing the marinade so each portion receives both phases. Separation alone does not mean the recipe has failed.
Can I treat millilitres as grams?
Millilitres measure volume; grams measure mass. Oil does not have the same density as water. Use the unit shown in the recipe rather than assuming the two numbers are interchangeable.
