Citric acid
Illustrative imagery · not a measure of quantity

Which product is meant?

Use food-grade citric acid intended for cooking, identified on its original package. A white powder cannot be identified by appearance. Keep it labelled and separate from cleaning products.

Can it replace another acid?

Citric acid powder, lemon juice and vinegar are not equal-weight substitutes. Follow the specific acid and quantity in a tested preservation recipe. A preliminary acid treatment does not validate the safety of a later storage process.
