# Vinegar

The type of vinegar and its stated acidity answer different questions.

Does a milder taste mean less acid?

Rice, apple cider and distilled vinegars have different aromas. Taste alone cannot establish acidity. Use the acidity stated on the bottle and required by the recipe; the name of the vinegar is not enough.

Can I swap or dilute it?

For shelf-stable pickles, follow a tested preservation recipe without changing the vinegar, food or water proportions. A flavour substitution or proportional calculator does not validate canning safety. Our marinade recipes are not tested canning processes.
