Aromatic leaves used to infuse a liquid, with attention to removal.

Should whole leaves stay in the serving?

Whole bay leaves remain tough after cooking. Remove them before serving. Ground culinary bay is a different form: follow the recipe instead of converting leaves to powder by count.

Can any similar-looking leaf be used?

Use labelled culinary bay leaves from a food supplier. Similar appearance is not reliable plant identification. Store dried leaves closed, dry and away from heat to protect their aroma.
